Farmers Market Hash

  • 1 Carrot Cubed
  • 1 Baby Red Potato Cubes
  • 1 Green Pepper Cubed
  • 1/2 Onion Cubed
  • 2 Cups of Fresh Spinach
  • 1 Sprig of Rosemary
  • 1/2 Cup Water
  • 1 Tablespoon coconut oil
  • Salt and pepper to Taste


  1.  Turn the stove on medium heat.
  2.  Preheat a large sauté pan and add coconut oil and rosemary sprig. Let the mix cook for 5-10 seconds, allowing the rosemary to infuse.
  3. Add onions and green peppers to the pan, and cook until brown.
  4.  Add water, potatoes, and carrots to the pan and cook for 6 minutes.
  5.  Remove from the pan from the heat, and toss in fresh spinach.
  6.  Season with salt and pepper.
  7.  Remove rosemary sprig, & serve!
