Tabbouleh Lettuce Wraps with Pan Seared Orange Chicken

  • 1 cup tabbouleh
  • 1 cup boiling water
  • 1 bunch of parsley (chopped)
  • 1 carrot (minced)
  • Juice from 1/2 lemon
  • 1/2 cup green onions (small chopped)
  • Salt and pepper to taste
  • 2 chicken breast (cleaned)
  • 1 orange (quartered)
  • 2tbs. Honey
  • Salt and pepper to taste
  • S1 bunch of living bib lettuce


  1. Place tabbouleh in a medium bowl.
  2. Add boiling water, cover and set in fridge for 30 mins.
  3. Remove tabbouleh from fridge add parsley, carrots, green onions, lemon juice, and salt and pepper.
  4. Mix well. Set aside.
  5. In a hot skillet place 1 tsp. of coconut oil.
  6. Add chicken breast and cook for 2 mins on each side.
  7. Squeeze orange wedges and honey over chicken and cook for additional 2 mins.
  8. Remove chicken from pan and slice long ways, into 6-8 strips.
  9. Wash your bib lettuce and remove from root.
  10. On a plate, assemble 3 lettuce cups, place 1 spoonful of tabbouleh on each lettuce leaf, and place 2 chicken strips on top.Pick up your lettuce wrap like you would a taco, and enjoy!
